Almost as good as sex?

Well I’m all better. B-man’s flu is lingering. Master came down with it yesterday.

Poor Am. She’s doomed.

Thank you for all the well-wishes. It’s very nice to read them. :-)

I wish I had something of excitement to report but a sick Master does not make for much perversion to share. Maybe if he gets to feeling better we can get up to something wicked, but I’m not holding my breath. (though I probably should lest I’m reinfected with this shit!)

So since I have nothing else to share, I’ll share some kitchen successes!

I found some recipes that have been huge hits with the family. I get excited when something pleases everybody all at the same time. That’s a rarity, yanno.

One is a meatloaf recipe that’s made in the crock pot. I’ve been doing that one on Tuesday’s because I work in the afternoon on Tuesday and it’s nice to come home to a meal that’s mostly finished. Master loves this one so much that he had me make it for his friend when he was over visiting. (it just does a cook’s heart good to see two grown men eating so fast they can’t even talk. All you hear is *nom* *nom* *nom* *nom*) I serve that with a mega-fattening mashed potato recipe.

Another recipe is for potato soup, also made in a crock pot. It is so easy, and omg-yummy. I serve it with deli-sliced turkey and provolone sub-type sandwiches and the taste combination is heavenly.

And of course the tomato soup recipe from Pioneer Woman is a family hit as well. Though I do leave out the sherry and I have to strain out the onions and tomato chunks for the picky boy child.

Another one is called twice-baked potato casserole that I served with oven-fried chicken strips. The casserole is to-die-for. Srsly.

I made ’easy sweet-n-sour meatballs’ last night that left me with zero leftovers. Tonight I’m trying a new cheesy chicken enchilada recipe. And maybe the Caramel Apple Cobbler Cake that Mandy turned me on to. At least that one is low-fat.

It’s no mystery why I’m overweight..lol The only thing I’m accomplishing at Curves is being a healthier fat. But I’m really enjoying myself in the kitchen and Master likes me round. ;) (or so I keep telling him!)

I’ll put the recipes behind the cut so you can try them and let me know what you think. And if you have a favorite or a new hit, post it, please? I need new stuff. I’m so bloody anxious for garden season, but Christ, we’re still getting snow here. Boo.

p.s. I did try to get broken nipple pics but the flash just whites out the bruising. It’s mostly healed now anyway, just a dark spot left on the top and bottom.

Crockpot Meatloaf

2 lbs ground beef
1 onion finely diced
½ can(7 fl oz) tomato soup – other half will be used in sauce
1 tbsp worcestershire sauce
2 tbsp brown sugar
1 cup bread crumbs
½ tsp salt
¼ tsp pepper
1 egg
lightly beaten

Sauce
½ can tomato soup
1 tbsp worcestershire sauce
½ cup water
2 tsp mustard (paste not powder)
2 tbsp brown sugar

Place all meat loaf ingredients in a very large mixing bowl. Mix until well combined. Shape with hands into a large round meatloaf about ½ an inch smaller than your crock pot. Place loaf into crock pot. Mix all sauce ingredients together. Pour over top of meat loaf. Cover and cook for 8-9 hours on Low OR 4-6 hours on High.

Mega-Fattening Potatoes (I’m pretty sure this came from Pioneer Woman too.)

5lbs peeled and halved russet potatoes. Place potatoes into a pot of simmering water. Boil til done. Drain. Mash with potato masher. Mash in 1 to 2 sticks softened butter and one 8oz package softened cream cheese. Add about 1/2 cup half&half. Season to taste (lawrys, garlic, pepper, whatever).

Cheesy Potato Soup

About 6 or 7 potatoes, peeled and diced into bite size chunks.
1/2 cup diced onion
1 stalk celery, diced
3 to 4 cups of chicken broth
1 cup water
3 tbsp flour
1 cup milk
1 8oz bag shredded cheese (I use cheddar, could be anything you want)

optional:
1/4 c. crumbled bacon
chopped green onions

In slow cooker, mix potatoes, onion, celery, broth and water. Cover, cook on low for 6 to 8 hours, or high for 3 to 4. In a small bowl, mix flour into milk, stir into potato mixture. Increase heat to high, cover and cook 20 to 30 minutes. Stir in cheese until melted. Garnish servings with bacon bits and green onions if desired.

Twice-Baked Potato Casserole

6 medium unpeeled potatoes, baked.
pepper
salt
1 lb bacon, cooked and crumbled.
3 cups sour cream
2 cups shredded mozz. cheese.
2 cups shredded cheddar cheese
2 green onions, chopped.

Cut baked potatoes into cubes. Place half in a greased baking dish. Sprinkle with salt and pepper and half the bacon. Top with 1/2 the sour cream and cheeses. Repeat layers. Bake uncovered at 350 for 20 minutes or until hot and cheese is melted. Sprinkle with onions if desired.

Oven-Fried Chicken

1 1/2 c. mashed potato flakes.
1 tsp. season salt
1/2 tsp. paprika
1/4 tsp. garlic powder
1/4 tsp. pepper
1/4 c. butter, melted
1 tbsp. water
1 egg.
Chicken pieces

Preheat oven to 400. Combine potato flakes, salt, paprika, garlic powder, pepper. Add butter, mix well. In another bowl, mix egg with water. Dip chicken in egg, coat with crumb mix, place in ungreased baking dish. Bake 55 to 60 minutes, or til chicken is done.

Sweet-n-sour meatballs

1lb ground beef
1/2 c. dry bread crumbs
1/4 c. milk
1/8 tsp. pepper
1 tbsp. parsley
1/3 c. minced onion
1 tsp. salt
1 egg, slightly beaten
1/2 tsp. worcestershire sauce

1 (12oz) bottle chili sauce
1 c. grape jelly

Combine first 9 ingredients. Mix well. Shape mixture into approx. 1 inch meatballs. Brown in skillet.
Meanwhile, in saucepan, mix chili sauce and grape jelly over medium heat until jelly is melted. Add meatballs to sauce mix and simmer for 30 minutes, or until meatballs are cooked through.

Caramel Apple Cobbler Cake

1 1/2 c. reduced fat bisquick (or regular)
1/3 c. splenda- baking kind (or white sugar)
1/2 c. fat free milk
2 medium apples – peeled(optional) and diced
1/2 c. brown sugar
1/2 tsp. cinnamon
1 c. boiling water
Fat Free Cool Whip (or regular)

Heat oven to 350. Coat a 9x9x2 pan with non-stick spray. Mix bisquick, splenda and milk together. Spread into pan. Top with apples. Mix brown sugar and cinnamon together and sprinkle over apples. Pour boiling water over top. Bake for 45 min or until knife comes out clean. Top with cool whip. Serve warm.

Go forth! Eat! :D

    You can’t catch the same virus twice. You can catch extremely similar ones, but if your Master got the flu from you, he can’t “give it back”, so to speak.

    Or so some medical professional once told me.

    Oh my GOD that meatloaf sounds so yummy! I’m definitely going to try that one out soon! never made it in a crockpot before…

    Have you ever made shepard’s pie? I make it for Master and the family and it is a HUGE hit. Very economical, quick, and super tasty!

    I also have a really good meatball recipe my mom used to make, with mushroom soup…cheap and easy, just like me. :)

    If you’d like either of these recipes let me know as I don’t want to take up comment space posting them willy-nilly.

      I’d like both of them, please. I don’t even know what shephard’s pie is. Is that the meat and potato pie or something?

      Make sure you try the apple stuff. It is SO GOOD! Yum. :-)

        Yes…it’s meat and veggies and cheese and mashed potatoes all layered and baked. Mmmmmmmm. I serve it with a salad and some sort of bread. Nummers.

        And I am going to try the apple bake…anything with Bisquick is yummy and easy.

        Lemme know if you want me to send you the pie recipe I use or there are countless others online…

            Here’s *my* recipe for Shepard’s Pie. My Master can’t eat enough of it!

            I’m doing this from memory, so the recipe items are not precise!

            1 1/2 to 3/4 lb packet of leanest ground beef
            1 packet of ground lamb (our store only has them in one size, and it’s a lb or less)
            2 carrots, chopped fine
            2 sticks of celery, chopped fine
            1 large yellow onion (chopped very fine, in your case!)
            2 cloves of garlic, minced
            2 tbs tomato paste
            2 bay leaves (optional) (also optional, chopped parsley)
            pinch of thyme
            1/2 c. beef broth
            2 tsp. cornstarch or 1 tbs. flour

            Mashed potatos (I also like to use mashed celeraic [celery root] to spice things up now and then!)

            You brown all the meat, and set aside. Then you saute the vegtables and bay leaves (I always add the onion and get it nice and translucent before I add the other veg — it makes the onions just blend into the meat, later, so that people who don’t like onions won’t notice it!)

            Then, bring everything back together in the pan (I use one with high sides) and toss in the broth and cornstarch and thyme tomato paste, and reduce until the fluid is thick.

            Then, pour it all in a casserole dish, and put a reasonably thick layer of mashed potatos on top. Back for about 40 minutes — serve piping hot with a side of peas, to be traditional!

            The best thing about this is you can make it the day before, refrigerate, and then do the final baking step the next day!

              I’ve never had lamb before! I’d like to see what it tastes like. :D

              Do you remove the bay leaf before eating?..lol Seems like I remember something about taking the bay leaf out of soups before serving, or at least not eating it.

              You didn’t say what oven temp and stuff. Bake it for 40 mins? Or stovetop for 40 mins? (keep in mind that I’m a complete kitchen retard. I need very precise directions! ;-)

                Lamb is fantastic (being Australian lamb is like a national dish), but I’m not that big a fan of minced (ground) lamb.

                I think we may be having that potato soup for dinner tonight because I may possibly have forgotten to get the meat out of the freezer.

                Okay, put in a 375 oven and BAKE for 40 minutes.

                You can leave the bay leaves in if you like, but look for them as you serve, and if you don’t see them, just warn your eaters that they need to keep an eye out for it. That’s what I normally do, but you can also just take them out at the putting-in-casserole point!

                Lamb is the meat of the gods! Or at least my Master thinks so (he being British) and so I cook it often. I love it best ground — it’s such a rich meat! For doing roasts, I find the flavor is a bit strong for me the first time around (although my Master tears into a lamb roast like a cave-man!) so I tend to do the “twice-baked” thing with lamb, like make a roast and then use the meat in stews and ragouts and the like.

                Oh, a note on the name controversy of shepard’s pie. (yes, there is one!)

                It’s called “Shepard’s Pie” if it’s made with lamb (get it? — sheep! Baaa!) and “Cottage Pie” if made with beef. I came up with the idea of mixing them on my own, so I call my recipe “Shepard’s Cottage Pie,” which, if you’re me, is amusing. But then, I’m a dork!

                Oh, I’ve got another recipe for you — the world’s best, quickest (and amazingly, healthiest) crisp! I’ll email it! :D

            Here ’tis. My ghetto and easy (but so yummy!) Shepard’s Pie:

            This recipe feeds Master, Mistress, 4 kidlets, and myself. It’s great the next day, too!

            * 2 lbs ground beef
            * 1 bag frozen peas and carrots mix (10-12 ounce bag)
            * 3-4 packages cheesy instand mashed potatoes (or you could do mashed from scratch, but I use instant due to time constraints)
            * finely chopped onion (I usually use one small one)
            * One tiny can of Tomato Paste
            * Worcestershire Sauce
            * Fancy schmancy mustard (dijon)
            * Beef broth
            * Garlic (fresh, or powder, whichever you have on hand)
            * Catsup
            * 2 eggs
            * Shredded cheese (your choice & optional)

            Pam/Grease a 9X9 pan & set aside. Fry the hamburger & onion (adding salt, garlic, pepper to taste) & drain. Prepare mashed potatoes per instructions & mix in the eggs…whip for awhile either by hand or with mixer (the eggs help the mashed potatoes set while baking). In a small mixing bowl, mix 1 cup of the broth, a tablespoon each of mustard and worcestershire, and two tablespoons of the tomato paste. Start tasting, lol, and adding catsup until the flavor is good. This depends largely on your taste buds…I like the sweet catsup-y taste. Pour into ground beef and mix.
            Spread meat in the bottom of your baking pan and put veggies on top. This is where I throw in a bunch of shredded cheese! Spread mashed potatoes on top of veggie layer, nice & thick, then sprinkle on as much as cheese as you want. Bake at 350 for about 40 minutes and you’re done!

            A green salad and breadsticks completes the meal.

              My mom was a single parent so ground beef was a staple around our house as it went a long way…cheap, filling, and easy!

              Mom’s Meatballs

              1 lb ground beef
              1 small yellow onion, diced (i chop SMALL as I hate onions, but the recipe just isn’t good with them!)
              2 eggs
              5-6 slices of bread
              1 10oz can of mushroom soup
              Salt, pepper to taste

              Throw the ground beef in a large mixing bowl. Add onions. Or not. Whatever your fancy. Crumble all the bread into the beef…this takes a while to pull it all apart…you want like 1/2 to 1 inch pieces. I like to dance around the kitchen while I am doing this but that’s just me. Add eggs. Stir in 1/4 can of the mushroom soup. Now it’s time to get down and dirty. With hands, fold and mash mixture until everything is nice and combined. You have to use your hands as that’s the way I was taught and they just taste better that way. So there. You’ll want the consistency to be thick enough so that the meatballs stand up to the simmering, but not so thick that they’re dry. Add more bread as necessary to get the right texture. Wash all of the meat and mushroom soup out from under your nails. Yuck.

              Lightly oil a good-sized fry pan. Roll meat mixture into balls (2″ diameter?) and place in pan on medium to medium/high. Fry and turn carefully. Once all sides of meatballs have a good fry on the outside, turn heat to low. Take the rest of your mushroom soup and mix with about 3/4′s can of water. Whisk. Pour over meatballs. Pop a lid on and just wait for little meaty, round pieces of heaven! I usually let them simmer for about 30-45 minutes, but simply do a fork test as you go to be sure they’re done.

              I eat these with plain, buttered/salted wide egg noodles (on the side) and buttered/salted canned red beets. LOL. YUM. Mmmmmmm, beets. ;)

        I’d love to hear it, there can never be to many recipes in the Big Black Book. Although the actual trying to cook it will probably be delegated to my wife, she is the chicken-wiz in this household.

          It’s so easy it’s cah-razy.

          Take one whole chicken, rub it up with spices or whatever rocks your socks. Place it in the crockpot, no water. Spread a couple of washed, unpeeled potatoes with butter and wrap in foil, place them around the chicken in the crockpot. Cover, cook on low for 6 to 8 hours or til done. The chicken comes out like rotisserie(sp?) chicken, it’s tender, juicy.. mmmm.. with baked potatoes to boot!

    Master doesn’t do meatloaf. That used to annoy me cause I love some kinds of meatloaf. But since I had my gall bladder removed it gives me serious indigestion so it’s all good :)

    My Meatballs

    3/4 lb ground beef (not the leanest one)
    1/2 to 3/4 lb ground veal (can also use pork, turkey, or chicken but veal makes the tenderist meatballs)
    handfull bread crumbs
    handfull grated parmesan (not the green can, find fresh or buy a chunk and grate it, it really does make a difference)
    1 medium onion chopped medium
    small handfull of fresh italian parsley, chopped small
    1 egg (another one if you need it)
    salt, pepper, and your favorite seasonings
    a little more parmesan for good measure

    mix and brown in pan, add to your favorite sauce, or serve with mega fattening potatoes and a veggie. Or meatball sandwich, yum.

        3 peppers (any combo of colors, i use red,orange and yellow)
        1 onion
        ground meat (whatever your family prefers, i’ve heard tofu used but i’m such a carivore that seems like sacralige)
        2 cans tomato soup
        1 jar salsa
        1 packet taco seasoning

        Toppings
        shredded cheese
        tortilla chips
        sour cream
        hot sauce
        whatever else you put on your tacos

        Chop up peppers and onion and soften in a little oil in a frying pan on the stove. (until you can break them apart with wooden spoon)
        Put them in crock pot and mix in tomato soup, salsa and seasoning. DO NOT..i repeat DO NOT add water.
        Put the lid on the crock pot and set to low for all day, high for half the day. Stir when you think about it.
        Right before dinner brown the ground meat and drain it. (you can use the same frying pan you used for the veggies…avoides having to wash it till later)
        Put out drained meat, toppings and soup with a ladle and bowls and let everyone make their own.
        Typically you put a couple spoons of meat in the bottom of the bowl, ladle the soup over it, crush up the tortilla chips into it and sprinkle cheese on top and go to town…but you can adjust it to taste…

    I’ve lost 6 pounds this month and I’m not looking at your recipes – just the description of the twice baked taters makes my mouth drool and I love love love pot soup …..M is anal retentive on writing down points and helping me plan meals (weight watchers) but that means I can have cookies on occasion when I plan meals really good. Now he is trying to get me on the bike for a ride and I’m fighting it tooth and nail.

      Since I think you’re in my age bracket or close, it sounds like you’ve been doing Weight Watcher’s does it work pretty well? and how is it doing all the points stuff? I did Nutrisystem for awhile, got a little weight off, but I have no will power… and I think I love carbs too much…

    Oven fried chicken sunni style

    1 full chicken or chicken quarters
    dip into milk
    coat in bisquick
    sprinkle top of chicken with sea salt, paprika and garlic powder
    place in glass pyrex pan lightly coated in olive oil (skin side up)
    bake at 350 for 45 mins to one hour until nicely browned
    when removing from pan and placing on plates to serve pat bottom with paper towel to remove any excess oil
